Submit four sets of plans for commercial/industrial projects (two sets of plans for
residential projects). For expeditious proc~ssing, corrected sets can be
submitted in one of two ways:
1. Deliver all corrected sets of plans and calculations/reports directly to
the City of Carlsbad Building Department, 2075 Las Palmas Drive, Carlsbad, CA
92009, (619) 438-1161. The City will route the plans to EsGil Corporation and
the Carlsbad Planning, Engineering_ and Fire Departments.
2. Bring two corrected set of plans and calculations/reports to EsGil
Corporation, 9320 Che_sapeake Drive, Suite 208, San Diego, CA 92123, (619)
560-t468. Deliver all remaining sets of plans and calculations/reports directly to
the City of Carlsbad Building Department for routing to their Planning, ·
Engineering and Fire Departments.
NOTE: Plans that are submitted directly to EsGil Corporation only will not
be reviewed by the City Planning, Engineering and Fire Departments until review
by EsGil Corporation is complete.
2. The package submitted included structural plans, etc. If this project represents a

a) Provide the UL listing ·carcl showing ·the-exhaust sizing requirements used
for the pi?'.za oven hood and the cook line hood.
b) The Captive-Aire plan on sheet D-221 82 F-700 shows the cook line hood
requires 4,250 CF"M exhaust. The exhaust fan # KX-2 connected to this
hood is rated at only 2,450 CFM. Please correct.
c) Provide exhaust sizing calculations for dish washing hood (exhaust fan
#EF-21 ). UMC, Section 508. 7
d) Provide gre~se duct air velocity calcul~tions, for each grease duct
section. Minimum 1,500fpm and maximum 2,500 fpm. UMC, Section
507.8 The 2,450 CFM for the cook line hood with a 26 x
e) Each room provided with a kitchen exhaust system shall have air supplied
to the room equal to the amount of air to be exhausted. The exhaust and

5. Provide complete plans, details and calculation for the installation of the wood burning
pizza oven.
a) Provide a copy of the UL listing report and the installation instructions for the
proposed wood burning pizza oven. The Cut-sheets provided do not provide
information needed for checking installation of proposed wood burning pizza
oven.
b) Detail the wood burning pizza oven fh,Je (vent) termination as per UMC, Section
806.
c) Detail the wood burning pizza oven flue (vent) offsets, length, pitch and
clearances as per UMC, Section 805.
d) Provide plans and calculations for the support stand or system for the proposed
wood burning pizza oven. (Si~ned by the licensed Civil En_gineer)
6. Provide complete kitchen hood plans, details, and calculations to show .compliance with
UMC, Chapter 5, Part II
a) Provide the UL listing card showing the exhaust sizing requirements used for this
hood.
b) Provide roof framing around .new openings in the roof for the exhaust and make-
up air ducts for .kitchen hoods.
c) Provide exhaust sizing calculations for kitchen hoods. UMC, Section 508.7
d) Provide grease duct air velocity calculations. Minimum 1,500 fpm and maximum
2,500 fpm. UMC, Section 507.8·
e) Provide construction details of required fire rated grease duct enclosure and hood
enclosure. UMC, Sections 507.6, and 508.4.1
·f) Detail grease duct discharge clearances as per UMC, Section 507.11, (Minimum
of 1 O feet from parapet wall and .air intake of HVAC unit.)
g) The fire-rated grease duct and/or hood enclosures must extend from the point of
penetration of the ceiling up to the roofing. The ceiling or hood enclosure must be
over the hood. UMC, Sections 507.6, 508.4, and 508.4.1
h) The fire-rated grease duct enplosures must be sealed around the duct at the point
of penetration of the ceiling. UMC,-Section 507.6
i) Show required cleanouts for grease duct on hood. UMC, Section 507.5

j) Detail 1/4 inch per foot slope on grease duct back to ·hood. UMC1 Section 507.4
k) Each room provided with a kitchen exhaust system shall have air supplied to the
room equal to the amount of air to be exhausted. T~e exhaust and make-up air
systems shall be connected by an electrical interlocking switch. UMC1 Section
402.4
I) Clearly show the material used to construct the hood and exhaust duct. UMC,

m) A complete kitchen hood system plan review will be done when the complete

The Mt. Adams Wood-Fired Oven
The Mt. Adams features a standard door .
op~ning .30 inches wide x 1 O. inches .high. The
inside diameter of the oven floor is 52 inches,
~e~ulting in a 15-squar$-,-foot cooking surface. The
Mt Adams is U,L. Listed·for installation with a 1-inch
side clearance to combustible builqing materials.
The 'hearth and dome of the oven are cast
. using a very dense, deep heat sink refractory
formulation. The 1,0oo--pound, monolithic,
ca.st-ceramic floor sits on 4 inches of rigid
insulation and is itself poured to a thickness
of 4 inqhes. The 1 ;200-pound, monolithic dome
is also cast to a thickness of 4 inches. The hearth
and dome are conn~cted and supported by a
carefully. tensioned stainless steel ~xoskeleton,
which ensures structural int,egrtty and long life. the
-body of ·the oven rests on a 1 0-gauge steel pan
bolted to a heavy-duty, 3-inch angle iron stand.
The oven is wrapped With at least 2 inches of spun
of?ramic fiber iosulatic:m and enclosed (top and
sides) with 16-gauge galvanized steel. The oven
arrives, compl~tely assemblecj and ready to set in ..
place.
The removable thermocouple is centered and
-cast into the underside of the hearth to within 1 inch
Of the cooking surface~ The digital thermo-meter
readout can be, mounted to the oveh stand or .
incorporated into the, decorative facade, at the
discretion of the designer.
The QVen vents tnrough a 1 O-inch !.D.'fiue collar
located above the doo{Wa}'. Our sQlid-fuel ovens
are listed for' direct venting through a power-
ventilated~ grease-duct-rated chimney or through
an exhaust hood constructed.in accordance with
NFPA 9£$.
