ventmq location of the unit, and location of the low control, shall be submitted to the Administrative Authority for approval The minimum rated flow of any grease trap shall not be less than twenty (20) gallons per minute (1 3 Us) and the maximum permitted rate of flow shall be fifty-five (55) gallons per minute (3 5 Us) Any deviation from this requirement must first be approved by the Administrative Authority The fifty-five (55) gallons per minute (3 5Us) limitation does not apply to industrial interceptors and separators, interceptors for slaughter houses, meat packing or curing the grease trap at this controlled rate of flow it is free of turbulence It then passes over a series of baffles which cause greases, fats and oil to become 'separated and released from waste water They float to the top of the grease trap to accumulate until remov- ed Elimination of the flow control would increase the velocity of the water entering the grease trap, creating turbulence in the grease trap It would permit the flow rate through the grease trap to exceed its rated capacity and the grease trap would be overloaded Waste retention time in the grease trap would be reduc- ed and would not be of sufficient length to allow maximum grease separation As a result of this reduced ef- ficiency, undesirable wastes would be permitted to enter the drainage system, resulting in stoppages Without the flow control device, a much larger and more expensive grease trap would be required The device shall be provided with an air intake or vent It is recommended that unions be have an approved rate of flow which is not less than given in Table 7-2 of the Uniform Plumbing Code for the total number and size of fixtures connected to, or discharging into them, and the total trap and interceptor must be so installed and connected that it shall at all times be easi- ly accessible for inspection, cleaning and removal of the intercepted grease (b) Grease traps and interceptors shall be maintained in efficient operating condition by periodic' removal of the accumulated grease Failure to do this defeats the function of the device The col- .^ lected grease must not be introduced into the drainage piping or public or private sewer (c) Grease traps and interceptors shall be constructed of durable materials satisfactory to the Ad- 3 mmistrative Authority, such
