GREASE TRAPS
When deemed necessary by the Administrative Authority, approved type grease traps (See Fig 7-34)
complying with the requirements of the Uniform Plumbing Code and meeting IAPMO Property Standards
PS-13 shall be installed in waste lines leading from sink drains and other equipment likely to produce large
quantities of grease in establishments such as restaurants, cafes, lunch counters, cafeterias, bars and
clubs, institutional and commercial kitchens and other similar operations Individual dwelling units and
private living quarters are excluded from this requirement

Prior to installation of a grease trap, plans indicating the size and rating of the unit, pipe sizing, ventmq
location of the unit, and location of the low control, shall be submitted to the Administrative Authority for
approval
The minimum rated flow of any grease trap shall not be less than twenty (20) gallons per minute (1 3 Us)
and the maximum permitted rate of flow shall be fifty-five (55) gallons per minute (3 5 Us) Any deviation
from this requirement must first be approved by the Administrative Authority The fifty-five (55) gallons per
minute (3 5Us) limitation does not apply to industrial interceptors and separators, interceptors for slaughter
houses, meat packing or curing establishments, soap factories, tallow or fat rendering and hide curing
establishments or public and private wash racks

ficiency, undesirable wastes would be permitted to enter the drainage system, resulting in stoppages
Without the flow control device, a much larger and more expensive grease trap would be required The
device shall be provided with an air intake or vent It is recommended that unions be installed on either side
of the device to permit its removal for maintenance

Required grease traps shall have an approved rate of flow which is not less than given in Table 7-2 of
the Uniform Plumbing Code for the total number and size of fixtures connected to, or discharging into
them, and the total capacity of gallons (liters) of fixtures discharging into any such receptor shall not ex-
ceed two and one-half (21/z) times the certified gallons per minute (Us) flow rate of the grease trap in accor-
dance with Table 7-2

The total number of separate fixtures (the term "fixture" shall mean and include each plumbing fixture,
appliance, apparatus or other equipment required to be connected to or discharged into a grease trap by
any provision of Section 711 of the Uniform Plumbing Code) that may connect or discharge into one (1)
grease trap limited to four (4)

(a) Each grease trap and interceptor must be so installed and connected that it shall at all times be easi-
ly accessible for inspection, cleaning and removal of the intercepted grease
(b) Grease traps and interceptors shall be maintained in efficient operating condition by periodic'
removal of the accumulated grease Failure to do this defeats the function of the device The col- .^
lected grease must not be introduced into the drainage piping or public or private sewer
(c) Grease traps and interceptors shall be constructed of durable materials satisfactory to the Ad- 3
mmistrative Authority, such as fabricated steel, cast iron, or precast or poured in place reinforced
concrete, and shall have a full size gas tight cover, which can easily and readily removed

The Administrative Authority may require such tests as may be necessary to determine the grease col-
lecting efficiency of the various types and kinds of grease traps and interceptors to establish the rate of flow
or other rating thereof Such test requirements may be revised or modified from time to time as may be
deemed necessary by the Administrative Authority A list of approved and acceptable grease traps and in-
terceptors shall be kept on file m his office.
No grease trap or interceptor shall be hereafter installed which does not comply in all respects with a
type or model of each size thereof approved and accepted by the Administrative Authority Whenever it shall
come to the attention of said Authority that any grease trap or interceptor does not comply, he shall im-
mediately suspend or revoke such approval
Unless specifically required or permitted by the Administrative Authority, no food waste disposal shall
be connected to or discharged into any grease trap

Recommended Procedures for Sizing Commercial Kitchen Grease Interceptors
H1 Waste Discharge Requirements ,. . »(a) Waste discharge from fixtures and equipment in establishments which may contain grease, including but not
limited to, scullery sinks, pot and pan sinks, dishwashing machines, soup kettles and floor drains located in areas
where grease-containing materials may exist, may be drained into the sanitary waste through the interceptor when ap-
proved by the Administrative Authority(b) Toilets, urinals and other similar fixtures shall not waste through the interceptor
(c) All waste shall enter the interceptor through the inlet pipe only
(a) Interceptors shall be constructed in accordance with the design approved by the Administrative Authority and
ill have a minimum of two compartments with fittings designed for grease detention
(b) There shall be an adequate number of manholes to provide access for cleaning all areas of an interceptor, a
minimum of one (1) per ten (10) feet of interceptor length Manholes covers shall be gas tight in construction having a
minimum opening dimension of twenty (20) inches
(c) In areas where traffic may exist the interceptor shall be designed to have adequate reinforcement and cover
