facilities serving the area, a drinking fountain, and signs. Please address the fo llowing:

a) Each fixture discharging into a grease interceptor shall be individually trapped and vented in an
approved manner. Please show on the plans how each fixture entering the grease interceptor is
vented individually with trap arm lengths in compliance with CPC I 002.2.
b) Provide a complete plumbing drain/waste/vent detail showing the grease and sewer sides of the
drainage system, traps, vents, and clean-outs of all fixtures on the system. CPC IO 14. I.

50) to be completed by the APPLICANT.

This letter is regarding the usage of the existing Type I and Type II hoods with the new cooking
appliances under the hoods. The four existing Type I hoods were originally designed to serve the
following cooking appliances:
• (1) rice cooker
• (1) 1-burner wok range
• (1) 2-burner wok range
• (1) 3-burner wok range
• (3) fryers
• (1) 36" radiant broiler
• (1) 6-burner range cooktop
The new cooking appliances proposed under the existing Type I hoods include:
• (1) 24" griddle
• (1) 60" griddle
• (2) 6-burner range cooktop with oven
• (2) fryers
• (1) 24" radiant broiler
• (1) 48" radiant broiler
• (1) single deck convection oven
The original Type I hoods were designed for up to heavy-duty cooking appliances and the new cooking
appliances do not exceed this duty level.
The existing Type II hood originally serving a dishwasher will remain to serve a new low temp
dishwasher. There is no change of use for the existing Type II hood.

The contractor has verified the performance and operability of the existing hoods. Based on the
kitchen exhaust and make up air report dated June 20, 2023 provided by the contractor, the total hood
exhaust CFM airflow measured in field is within 2% of the existing designed airflow.

application. The Carlsbad Municipal Code (CMC) can be referenced during completion of this document by clicking on
